If you like strong broths and can tolerate spicy food, don't miss pozole in Mexico. It is a broth based on corn or corn kernels of the cacahuazintle variety that, when boiled, open and produce a foam that gives it more body.

Some meat and onion, lettuce strips and radish are also usually added. The two basic varieties of pozole that you will find in Mexican food are white and red. The latter is usually topped with crushed chile or chile in oil.
